i’m saying ‘yall remember’ like tuna help ain’t still sitting in the aisles of major chain groceries like walmart & target alike.
growing up a millennial kid with a two working parents household, box meals like tuna helper were often my saving grace in a bid to be independent & nourish myself.
& as i grew older, i grew bolder with how i remixed those in-the-box standard recipes, because ya girl ain’t met a box she’d stay in YET.
nowadays… we don’t need no stinking box; we got the basics down pat so whipping up this easy, nostalgic dish whenever the mood strikes, feels like mastering a low level life skill.

i chose to do my dish as a cold mix instead of cooking everything together in a pan like a tuna helper because i like the freshness & crunch of the uncooked green onions & tuna.
post eats clarity: i’d add a bit of lemon juice or banana pepper juice to the tuna mix to add an enhancing acidity. i’d also do some fresh shredded parmesan cheese instead of generic grated parmesan cheese to boost the overall flavor profile as well as seasoning my alfredo sauce before using.
overall the dish gives grown up nostalgia on a plate & we love to see it.
we gotta get out kicks somewhere; why not in meals we enjoy each day?
